Ingredients

  • 2 large cucumbers

  • 3 tbsp melted butter

  • 2 cloves garlic, minced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • ½ tsp black pepper

  • ½ tsp salt

  • ½ cup grated Parmesan cheese

  • 1 cup shredded mozzarella

  • 2 tbsp fresh parsley, chopped

For Serving

  • Sour cream

  • Fresh parsley

  • Extra Parmesan

  • Fresh cracked black pepper

Instructions
 

Step 1

Preheat oven to 425°F.

Slice the cucumbers in half lengthwise, then cut each half into 2–3 thick spears.

Using a spoon, lightly scrape out a little of the seed center so the cucumbers won't become watery.

Pat completely dry with paper towels.

Step 2

Mix together:

  • Melted butter

  • Garlic

  • Garlic powder

  • Onion powder

  • Italian seasoning

  • Salt

  • Pepper

Brush generously over every cucumber spear.

Step 3

Sprinkle the Parmesan over the cucumbers first.

Top with mozzarella.

Finish with a little more Parmesan on top.

Step 4

Bake for 18–22 minutes.

Switch oven to Broil for 2–3 minutes until the cheese becomes bubbly with golden brown spots like the picture.

Step 5

Sprinkle with fresh parsley.

Serve immediately with a dollop of sour cream on top.

Connie's Tips

  • Remove a little of the seeded center so the cucumbers stay firmer.

  • Pat the cucumbers very dry before seasoning.

  • Freshly grated Parmesan browns much better than the canned variety.

  • Don't skip the final broil—it creates the beautiful golden crust that makes these look restaurant-quality.

Baked Cucumber Variations:

  1. Cheesy Cucumbers: Before baking, sprinkle shredded Parmesan, cheddar, or mozzarella cheese over the cucumbers. The cheese will melt and create a delicious, gooey topping.

  2. Lemon Zest: Add a fresh and zesty twist by incorporating lemon zest or a squeeze of lemon juice into the butter and herb mixture. Lemon complements the flavors beautifully.

  3. Dill and Yogurt: For a refreshing twist, mix chopped fresh dill and a dollop of Greek yogurt into the herb butter. This adds creaminess and a hint of tanginess.

  4. Garlic Lovers: If you love garlic, increase the garlic powder in the seasoning mix, or add minced fresh garlic to the butter mixture for an extra kick of flavor.

  5. Balsamic Glaze: Drizzle a balsamic glaze over the baked cucumbers just before serving. The sweet and tangy notes will elevate the dish.

  6. Herb Medley: Experiment with different herbs like fresh basil, cilantro, or tarragon in addition to or in place of the Italian herb seasoning. Fresh herbs can bring vibrant and unique flavors.

  7. Spicy Kick: If you like a bit of heat, increase the red pepper flakes in the seasoning mix or add a pinch of cayenne pepper for some spice..

  8. Fresh Cherry Tomatoes: Add halved cherry tomatoes to the baking dish alongside the cucumbers for a burst of freshness and color.
