  • Prepare the Cucumbers

  • Preheat the oven to 425°F.

  • Slice the cucumbers in half lengthwise, then cut each half into 2–3 thick spears.

  • Using a spoon, lightly scrape out some of the seeded center to help keep the cucumbers from becoming watery.

  • Pat the cucumber spears completely dry with paper towels.

  • Make the Garlic Butter

  • In a small bowl, combine the melted butter, minced garlic, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

  • Brush the garlic butter mixture generously over each cucumber spear.

  • Add the Cheese

  • Sprinkle the Parmesan cheese over the cucumbers.

  • Top evenly with the shredded mozzarella.

  • Finish with a little additional Parmesan on top.

  • Bake the Cucumbers

  • Bake for 18–22 minutes.

  • Switch the oven to Broil and broil for another 2–3 minutes, or until the cheese is bubbly with golden-brown spots.

  • Garnish & Serve

  • Sprinkle with fresh parsley.

  • Serve immediately with a dollop of sour cream and, if desired, extra Parmesan and black pepper.

  • For the best baked cucumbers, scrape out a little of the seeded center and pat them very dry before adding the garlic butter. This helps keep them firmer and prevents excess water from collecting while they bake. Finish them under the broiler for that bubbly, golden cheesy crust.
