☐ 3 large split chicken breasts, bone-in and skin-on
☐ 8–9 small yellow potatoes, cut in half lengthwise

☐ ½ teaspoon black pepper
☐ 2 cans cream of chicken soup
☐ ½ cup sour cream
☐ 1 cup chicken broth
☐ 3½ teaspoons ranch seasoning
☐ 2 teaspoons garlic powder
☐ 2 teaspoons onion powder
☐ ½ teaspoon paprika
☐ 2 cups shredded yellow-and-white fiesta cheese, divided

For the Corn
☐ 2 cans whole-kernel corn
☐ 4 tablespoons butter or 1 tablespoon garlic butter seasoning
☐ ½ teaspoon salt
☐ ½ teaspoon black pepper
☐ Chopped fresh parsley for garnish, optional
Directions
Prepare the Crockpot

Place the yellow potatoes, cut-side down, in the bottom of the crockpot.
Make the Creamy Sauce

Whisk together the cream of chicken soup, sour cream, chicken broth, ranch seasoning, garlic powder, onion powder, and paprika. Pour the sauce directly over the potatoes.
Add the Chicken

Season both sides of the split chicken breasts with salt and pepper. Place the chicken on top of the sauce.

Cover and cook on low for 6–7 hours, or until the potatoes are fork-tender and the chicken reaches 165°F in the thickest part without touching the bone.

During the final 30 minutes, pour both cans of corn into a saucepan, draining all the liquid from one can and half the liquid from the second can.

Add either the butter or garlic butter seasoning, along with the salt and pepper. Cook over medium-low heat for approximately 30 minutes, stirring occasionally.
Cut the Chicken

Remove the cooked chicken from the crockpot. Discard the skin and bones, then cut the chicken into bite-size pieces. Return the chicken to the crockpot and gently fold it into the potatoes and sauce.
Add the Cheese

Stir in 1½ cups of fiesta cheese. Sprinkle the remaining ½ cup over the top, cover, and allow it to melt for 10–15 minutes.
