Chicken Taco Bowls  & Burritos

These Chicken Taco Bowls & Burritos are loaded with seasoned chicken, rice, pinto beans, corn, green chilies, salsa, and melted Fiesta cheese. Serve in a bowl with your favorite toppings or wrap it in a tortilla for an easy, family-friendly Tex-Mex dinner.

Directions

  • Prepare the Chicken

Coat the chicken thighs evenly with 1 package of taco seasoning.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken and cook until browned and completely cooked through, reaching an internal temperature of 165°F.
Remove the chicken from the skillet, shred or chop it into bite-size pieces, and set aside.

  • Prepare the Rice Mixture

In the same skillet, add the pinto beans, green chilies, salsa, corn, rice, onion powder, garlic salt, salt, pepper, cilantro, and the remaining package of taco seasoning.
Add the chopped jalapeños if you want extra heat.
Pour in the chicken broth and stir everything together well.

  • Cook the Rice

Bring the mixture to a gentle simmer, then reduce the heat to medium-low and cover the skillet.
Cook for 15–20 minutes, or until the rice is tender and has absorbed the liquid.
Stir occasionally to prevent the rice from sticking. Add a small amount of additional chicken broth or water if the rice becomes too dry before it is tender.

  • Add the Chicken & Cheese

Return the cooked chicken to the skillet and stir it into the rice mixture.
Stir in 1 cup Fiesta cheese until melted and creamy.
Sprinkle the remaining ½ cup Fiesta cheese over the top.
Cover for a few minutes, until the cheese is melted.

  • Make Chicken Taco Bowls

Spoon the chicken and rice mixture into bowls.
Add your favorite toppings, such as lettuce, onion, sour cream, avocado, Greek yogurt, salsa, or fresh cilantro.

  • Make Chicken Burritos

Spoon the warm chicken and rice mixture into flour tortillas.
Add your favorite toppings, fold the tortillas around the filling, and serve warm.

  • Ground Beef Option

Substitute 1 pound ground beef for the chicken. Brown the beef in the skillet, drain the excess grease, and set it aside. Continue with the recipe as directed, adding the cooked beef back with the rice and cheese.

  • For the best texture, don’t let the rice mixture dry out while it cooks. Check it occasionally and add a splash of chicken broth if needed. Let the finished mixture rest covered for about 5 minutes before serving so the rice can absorb any remaining liquid and the flavors come together.
