Easy Homemade Chili Mac

This Easy Homemade Chili Mac is a hearty one-pot dinner loaded with seasoned ground beef, tender elbow macaroni, beans, tomatoes, and plenty of melted cheese. It’s warm, filling, and perfect for an easy family dinner.

  • Brown the Beef
    Add the ground beef and diced onion to a large pot or Dutch oven over medium-high heat. Cook until the beef is browned and the onion is tender, breaking the meat apart as it cooks. Drain excess grease if needed.

  • Add the Garlic
    Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

  • Add the Seasonings
    Stir in the chili powder, garlic powder, onion powder, cumin, paprika, salt, black pepper, and brown sugar until the beef is evenly coated.

  • Add the Tomatoes & Broth
    Pour in the diced tomatoes with their juice, tomato sauce, and chicken broth. Stir well and bring the mixture to a gentle boil.

  • Cook the Macaroni
    Stir in the uncooked elbow macaroni. Reduce the heat to medium-low and simmer for 10–12 minutes, stirring frequently so the pasta doesn't stick, until the macaroni is tender.

  • Add the Beans
    Stir in the red chili beans with their liquid and the drained pinto beans. Simmer uncovered for another 3–5 minutes, stirring occasionally, until everything is hot and the sauce has thickened.

  • Add the Cheese
    Remove the pot from the heat and stir in 1 cup of the shredded cheddar cheese until completely melted and creamy.

  • Finish & Serve
    Sprinkle the remaining ½ cup cheddar cheese over the top. Cover for 2–3 minutes to let the cheese melt, then serve hot.

  • For the best texture, stir the chili mac often while the pasta cooks, especially toward the end. The macaroni releases starch as it cooks, which helps thicken the sauce, but it can also stick to the bottom of the pot if left too long.

  • Can I use ground turkey instead of ground beef?

    Yes. Ground turkey works well in this chili mac. You may want to add a little oil to the pot when browning it since turkey is usually leaner than ground beef.

     

  • Can I use a different type of bean?

    Absolutely. Kidney beans, black beans, or additional pinto beans can be substituted for the red chili beans. Just keep the total amount of beans about the same.

     

  • Can I make this chili mac without beans?

    Yes. Leave the beans out if you prefer a more traditional beef-and-macaroni chili mac. You may want to slightly reduce the chicken broth so the finished dish stays thick and saucy.

     

  • What if my chili mac gets too thick?

    Stir in a splash of chicken broth until it reaches the consistency you like. The pasta will continue absorbing liquid as the chili mac sits.

    Yes. Store it covered in the refrigerator and reheat it gently on the stovetop or in the microwave. Add a splash of chicken broth when reheating to loosen the sauce if needed.
