How to make California Sushi Rolls: Step-by-Step Recipe
Prepare the Sushi Rice
-
Place the sushi rice in a fine-mesh strainer or bowl and rinse under cold water, gently stirring the rice with your hands, until the water runs mostly clear.
Drain well.
-
Add the rinsed rice and 2½ cups water to a saucepan with a tight-fitting lid.
-
Bring to a boil over medium-high heat.
-
Once boiling, reduce the heat to low, cover, and cook for 18–20 minutes, or until the water has been absorbed.
-
Remove from the heat and let the rice rest, covered, for 10 minutes.
Season the Rice
-
While the rice rests, combine ¼ cup rice vinegar, 2 TBSP sugar, and 1 tsp salt in a small saucepan.
-
Heat over low heat, stirring just until the sugar and salt dissolve. Do not boil.
-
Transfer the cooked rice to a large, wide bowl.
-
Slowly drizzle the vinegar mixture over the warm rice while gently folding it in with a rice paddle or wooden spoon. Avoid stirring or mashing the rice.
-
Let the seasoned rice cool to room temperature before making the rolls. Cover with a clean, damp towel while it cools to keep it from drying out.
Assemble the California Rolls
-
Wrap a bamboo sushi mat with plastic wrap to prevent sticking.
-
Place one sheet of nori on the mat with the shiny side facing down.
-
Wet your hands lightly with water and spread a thin, even layer of sushi rice over the entire sheet of nori.
-
Sprinkle the rice with sesame seeds, if using.
-
Carefully flip the nori over so the rice side is against the plastic-wrapped mat.
-
Arrange imitation crab, avocado, and cucumber in a narrow line across the nori, about 1 inch from the edge closest to you.
Roll the Sushi
-
Lift the edge of the bamboo mat closest to you and carefully roll it over the filling.
-
Continue rolling forward while applying gentle, even pressure to form a firm roll without squeezing out the filling.
-
Give the finished roll a final gentle press with the mat to help hold its shape.
-
Repeat with the remaining nori, rice, and fillings.
Slice and Serve
-
Wet a sharp knife with water and slice each roll into 6–8 pieces.
-
Wipe and re-wet the knife between cuts as needed for clean slices.
-
Serve the California Sushi Rolls with soy sauce, pickled ginger, and wasabi on the side.

Roll the Sushi: Lift the edge of the bamboo mat closest to you and roll it over the fillings. Continue rolling tightly but gently, using the mat to shape the sushi into a firm roll.
-
Slice & Serve: Wet a sharp knife to prevent sticking and slice the roll into 6–8 pieces, wiping and rewetting the knife as needed. Arrange the California rolls on a platter and serve with soy sauce, pickled ginger, wasabi, or spicy mayo.
