Creamy Tomato Chicken Spaghetti

Creamy Tomato Chicken Spaghetti is a cozy, comforting dinner made with tender chicken thighs, spaghetti, canned tomatoes, and a rich, creamy tomato sauce. The chicken is sliced into strips and served over the pasta with extra sauce drizzled on top for an easy family dinner that’s perfect for fall or any busy weeknight.

Directions

Cook the Pasta

• Bring a large pot of water to a boil. Cook the spaghetti according to package directions until al dente. Drain and set aside.

Season & Cook the Chicken

• Pat the chicken thighs dry. Season with  salt,  black pepper, paprika, garlic powder, and onion powder.

• Heat the olive oil in a large skillet over medium-high heat.

• Add the chicken thighs and cook for about 5–6 minutes per side, or until golden brown and cooked through to 165°F.

• Transfer the chicken to a plate and let it rest for about 5 minutes, then slice into strips.

Make the Creamy Tomato Sauce

• Reduce the heat to medium. Add the diced onion to the same skillet and cook for 3–4 minutes, until softened.

• Add the garlic and cook for about 30 seconds, just until fragrant.

• Stir in the tomato paste and cook for 1 minute.

• Add the diced tomatoes with their juices, chicken broth, Italian seasoning, remaining 2 tsp salt, and  black pepper.

• Bring to a gentle simmer and cook for 5–7 minutes, allowing the tomatoes to soften and the sauce to reduce slightly.

Make It Creamy

• Reduce the heat to low and stir in the heavy cream.

• Gradually stir in the Parmesan until melted and the sauce is smooth and creamy. Do not let the sauce boil after adding the cream and cheese.

Add the Spaghetti

• Add the cooked spaghetti to the skillet and gently toss until the noodles are completely coated in the creamy tomato sauce.

• If the sauce becomes too thick, add a small splash of chicken broth until it reaches your desired consistency.

Serve

• Divide the creamy tomato spaghetti between plates.

• Arrange the sliced chicken thighs over the spaghetti and drizzle a little extra creamy tomato sauce over the chicken.

• Finish with freshly grated Parmesan and chopped parsley.

RECIPE TIPS​​

  • For the creamiest tomato sauce, lower the heat before adding the heavy cream and Parmesan and do not let the sauce boil afterward. Add the Parmesan gradually, stirring until completely melted. Let the chicken thighs rest for about 5 minutes before slicing so they stay juicy, then drizzle a little extra creamy tomato sauce over the sliced chicken just before serving.

  • Can I use chicken breasts instead of chicken thighs?

    Yes. Boneless, skinless chicken breasts will work, but chicken thighs stay especially juicy and flavorful. Cook the chicken until it reaches an internal temperature of 165°F.

     

  • Can I use a different type of canned tomatoes?

    Yes. Petite diced tomatoes work especially well if you prefer smaller tomato pieces. Regular diced tomatoes give the sauce a slightly chunkier texture. Keep the juices from the can because they add flavor to the sauce.

     

  • Can I substitute half-and-half for the heavy cream?

    Yes, although the sauce won't be quite as rich or thick. Keep the heat low after adding it and avoid boiling the sauce to help prevent it from separating.

     

  • Why did my creamy tomato sauce turn grainy?

    The heat was likely too high when the Parmesan was added. Reduce the heat to low and add freshly grated Parmesan gradually, stirring until melted. Don't boil the sauce after adding the cream and cheese.

     

  • Can I make Creamy Tomato Chicken Spaghetti ahead of time?

    Yes, but it's best served fresh because the spaghetti continues absorbing the sauce as it sits. If reheating leftovers, add a small splash of chicken broth or cream and warm gently over low heat to bring the creamy sauce back together.
