Ingredients

□ 3 lb boneless pork shoulder or pork butt
□ 1 TBSP olive oil
□ 1 TBSP zesty Italian seasoning
□ 1 tsp garlic powder
□ 1 tsp onion powder
□ ½ tsp smoked paprika
□ ½ tsp black pepper
□ ½ tsp salt
□ 1 can (12 oz) Dr Pepper
□ 1½ cups BBQ sauce, divided
□ ¼ cup honey

Directions

Season the Pork
Pat the pork dry with paper towels. Rub it all over with the olive oil, then season evenly with the Italian seasoning, garlic powder, onion powder, smoked paprika, black pepper, and salt.

Add to the Crock Pot
Place the seasoned pork in the Crock Pot. Pour the Dr Pepper around the pork, then drizzle the honey over the top.

Slow Cook the Pork
Cover and cook on LOW for 8 hours, or until the pork is very tender and pulls apart easily with a fork.

Shred the Pork
Transfer the pork to a large plate or cutting board and shred it with two forks. Discard any large pieces of fat. Drain most of the cooking liquid from the Crock Pot, leaving about ½ cup behind.

Add the BBQ Sauce
Return the shredded pork to the Crock Pot. Stir in 1 cup of the BBQ sauce until the pork is evenly coated. Add more of the remaining BBQ sauce as needed for an extra-saucy pulled pork.

Heat and Serve
Cover and cook on LOW for another 15–20 minutes, just until the BBQ sauce is hot and everything is well combined. Serve warm on soft buns with extra BBQ sauce, if desired.
