● Prepare the Fresh Vegetables
Wash and thoroughly dry the mixed greens, then place them in a large salad bowl. Add the halved cherry tomatoes, sliced cucumber, bell pepper, and thinly sliced red onion. If using black olives and feta cheese, set the feta aside for the final garnish.

● Make the Balsamic Dressing
In a small bowl or measuring cup, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until smooth and well combined. Taste and adjust the seasoning if needed. For a slightly sweeter dressing, whisk in a small drizzle of honey or maple syrup.

 â— Dress the Salad
Pour a small amount of the dressing over the salad and gently toss to coat all of the vegetables. Add additional dressing a little at a time until the salad is dressed to your liking. It's always easier to add more than to remove excess dressing.

 â— Finish and Garnish
Transfer the salad to a serving bowl or individual plates. Sprinkle the crumbled feta cheese over the top just before serving for a creamy, tangy finish.

 â— Serve and Enjoy
Serve immediately as a fresh, crisp side dish, or turn it into a complete meal by topping it with grilled chicken, shrimp, steak, or tofu. This colorful garden salad pairs beautifully with almost any lunch or dinner.

RECIPE TIPS

đŸ„—Use Fresh, Crisp Greens: For the best flavor and texture, wash and thoroughly dry your lettuce before assembling the salad. A salad spinner works wonderfully to remove excess water.

đŸ„— Dress Just Before Serving: Toss the salad with the dressing immediately before serving to keep the greens crisp and prevent them from becoming soggy.

đŸ„— Make the Dressing Ahead: The balsamic dressing can be made up to 5 days in advance and stored in an airtight container in the refrigerator. Shake or whisk well before using.

đŸ„— Customize It: Add grilled chicken, steak, shrimp, salmon, hard-boiled eggs, or chickpeas to turn this fresh side salad into a hearty main course.

đŸ„— Add Crunch: Sprinkle on homemade croutons, toasted pecans, walnuts, sunflower seeds, or sliced almonds for extra texture and flavor.

đŸ„— Use Seasonal Vegetables: Garden salads are perfect for using whatever fresh vegetables are in season, such as shredded carrots, radishes, broccoli, avocado, or sliced mushrooms.

đŸ„— Don't Overdress: Start with about half of the dressing, toss, and add more only if needed. A lightly dressed salad tastes fresher and lets the vegetables shine.

Storage

  • đŸ„— Undressed Salad: Store the prepared vegetables and greens in an airtight container lined with a paper towel to absorb excess moisture. They will stay fresh in the refrigerator for 3–4 days.

  • đŸ«™ Balsamic Dressing: Keep the dressing in a sealed jar or airtight container in the refrigerator for up to 5 days. Shake or whisk well before serving, as the oil and vinegar will naturally separate.

  • ❄ Do Not Freeze: Fresh garden salad does not freeze well. The vegetables and greens will become soft and watery once thawed.

  • đŸ„„ Leftover Dressed Salad: Once the dressing has been added, the salad is best enjoyed within 24 hours. Any longer and the greens will begin to wilt and lose their crisp texture.
