Prepare the Taco Meat

Place the ground beef in a large pot and add enough water to cover the meat.

Bring to a boil, breaking the beef into very small pieces with a hamburger chopper or sturdy spoon as it cooks.

When the beef is almost cooked through but still slightly pink, drain it well.

Transfer the drained beef to a skillet over medium heat.

Add the taco seasoning, salt, and black pepper.

Continue breaking up and stirring the beef until it is finely crumbled, fully cooked, and well seasoned. If the meat becomes too dry, add a small splash of water and simmer for a few minutes.

Make the Cheese Crust

Heat a nonstick skillet over medium heat.

Spread a generous handful of shredded cheddar cheese into a circle about the size of your tortilla.

Butter one side of a low-carb tortilla and place it directly over the cheese with the buttered side facing up.

Cook for about 40 seconds, or until the cheese has melted and begun to form a crust.

Carefully flip the tortilla and cheese together so the cheese-crusted side is now facing up.

Fill the Taco

Place about ½ cup of the seasoned ground beef over one half of the tortilla.

Add a small handful of shredded lettuce and a few pinches of additional cheddar cheese.

Fold the tortilla in half over the filling.

Fry the Taco

Cook the folded taco for about 1½ minutes, then carefully flip it with a spatula.

Continue cooking and flipping as needed until the tortilla is golden and lightly crisp on both sides.

If any lettuce or filling falls out while you're flipping the taco, use your spatula to tuck it right back inside. The lettuce will soften slightly as the taco cooks—and that's exactly what you want. 😁

Serve

Remove the taco from the skillet and serve hot with sour cream and mild taco sauce.

Repeat with the remaining tortillas, cheese, beef, and lettuce.

  • Don’t rush the 40-second cheese crust. Give the cheddar time to melt and grab onto the tortilla before flipping—it makes the taco much easier to turn without leaving your cheese behind in the skillet.
