● In a large, heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat.

● Add 3 or 4 popcorn kernels to the pot and cover with a lid. When those kernels pop, the oil is ready.

● Remove the test kernels, then add the remaining popcorn kernels and sprinkle the sugar evenly over the top.

● Cover the pot and gently shake it every few seconds to keep the sugar from burning while the popcorn pops.

● Continue shaking the pot until the popping slows to 2–3 seconds between pops.

● Immediately remove the pot from the heat and carefully transfer the kettle corn to a large baking sheet or bowl.

● Sprinkle with the salt while the kettle corn is still hot and toss gently to coat evenly.

● If desired, drizzle with melted butter and toss again for an extra buttery flavor.

● Allow the kettle corn to cool for 5 minutes, then gently break apart any clusters before serving.
