Ingredients

For the Meatballs

  • 1 (32 oz) bag frozen homestyle Italian meatballs

  • 2 tbsp vegetable oil

  • 1 tsp garlic Parmesan seasoning

  • 1 tsp onion powder

  • ½ tsp black pepper

For the Sauce

  • 2 (15 oz) cans tomato sauce

  • 1 medium onion, diced and sautéed

  • 1 tbsp minced garlic

  • 3 cups chicken or turkey broth

  • 1 (10 oz) can Rotel, undrained

  • 1 tsp Greek oregano

  • 1 tsp Italian seasoning

  • ½ cup grated Parmesan cheese

For the Rotini Bake

  • 1 (16 oz) package rotini pasta

  • 2 tbsp butter

  • 2 tbsp vegetable oil

  • 2 mozzarella cheese sticks, sliced into small pieces

  • 2 cups Fiesta Blend cheese, shredded

  • ½ cup grated Parmesan cheese, for topping

  • Fresh basil and chopped cilantro, for garnish (optional)

​ How to make Cheesy Meatball Rotini Bake

Step 1: Preheat the Oven

Preheat your oven to 350°F. Lightly grease a 9×13-inch baking dish.

Step 2: Sauté the Onion

In a large skillet, heat 2 tablespoons oil and 2 tablespoons butter over medium heat.

Add the diced onion and cook until almost translucent, about 5–7 minutes.

If using fresh garlic, add it during the last minute of cooking. If using jarred minced garlic, stir it in during the final 1–2 minutes.

Step 3: Make the Sauce

In a large mixing bowl, combine:

Tomato sauce

Greek oregano

Italian seasoning

Sautéed onion and garlic

Chicken (or turkey) broth

Rotel (with juices)

½ cup grated Parmesan cheese

Stir until well combined.

Step 4: Assemble the Pasta Bake

Place the uncooked rotini in the prepared baking dish.

Pour the sauce evenly over the pasta, making sure all of the noodles are coated.

Sprinkle 1 cup Fiesta Blend cheese over the top.

Step 5: Season the Meatballs

In a separate bowl, toss the frozen meatballs with:

2 tablespoons oil

Garlic Parmesan seasoning

Onion powder

Black pepper

Arrange the seasoned meatballs evenly over the pasta mixture. If you have extra meatballs, freeze them for another meal.

Step 6: First Bake

Cover tightly with aluminum foil and bake for 45 minutes.

Step 7: Add the Mozzarella

Remove the foil and gently stir the pasta.

Cut the mozzarella cheese sticks into bite-sized pieces and tuck them throughout the casserole.

Cover again and bake for 15 more minutes.

Remove the foil.

Wrap & Freeze

Allow the casserole to cool completely, then cover tightly with a layer of plastic wrap followed by aluminum foil.

Label with the recipe name and date, then freeze for up to 3 months.

Bake from Frozen

Preheat your oven to 350°F.

Remove the plastic wrap and replace the foil.

Bake covered for 1½–2 hours, or until the casserole is hot throughout and the meatballs reach 165°F.

Remove the foil, add the mozzarella pieces, remaining Fiesta Blend cheese, and Parmesan cheese. Return to the oven, uncovered, for 5–10 minutes, or until the cheese is melted and bubbly.

Garnish with fresh basil and cilantro, if desired, and serve warm.
