Paprika Italian Chicken Rub

This Paprika Italian Chicken Rub combines smoky paprika, Italian seasoning, garlic, onion, and pepper to give chicken thighs and legs bold, savory flavor. Coated with olive oil and allowed to marinate, the chicken bakes until juicy and tender with a beautifully seasoned exterior. Add liquid smoke for an optional smoky finish without using a smoker.

Directions

  • Prepare the Chicken

Pat the chicken thighs and drumsticks dry with paper towels. Place them in a large mixing bowl.

  • Make the Paprika Italian Rub

Add the paprika, Italian seasoning, garlic salt, onion powder, black pepper, and salt to a small bowl.

Stir until the seasonings are evenly combined.

  • Season the Chicken

Drizzle the olive oil over the chicken and toss until every piece is lightly coated.

If using liquid smoke, add it to the chicken and toss again.

Sprinkle the seasoning mixture over the chicken a little at a time, turning and rubbing the pieces after each addition. Continue until all the seasoning has been used and every piece is evenly coated.

  • Marinate the Chicken

Cover the bowl and refrigerate the seasoned chicken for at least 1 hour. For even more flavor, marinate it for up to 8 hours.

Remove the chicken from the refrigerator approximately 20 minutes before baking.

Preheat the Oven

Preheat the oven to 375°F.

Line a large rimmed baking sheet with parchment paper or lightly grease a large baking dish.

  • Bake the Chicken

Arrange the chicken in a single layer, leaving a little space between each piece. Place the thighs skin-side up.

Bake for 40–50 minutes, or until the chicken is cooked through and the juices run clear. Cooking time will vary depending on the size and type of pieces.

Check the thickest part of each piece with a meat thermometer without touching the bone. The chicken is safe at 165°F, although thighs and drumsticks are often more tender around 175–185°F.

  • Rest and Serve

Remove the chicken from the oven and let it rest for 5–10 minutes before serving. This allows the juices to settle back into the meat.

  • For the best flavor, loosen the skin slightly and rub a little of the seasoning mixture underneath it before marinating. This seasons the meat directly while the outside becomes beautifully browned. For crispier skin, broil the chicken for 2–3 minutes at the end—but watch it closely so the paprika doesn’t burn!
