Paprika Italian Chicken Rub

This Paprika Italian Chicken Rub combines smoky paprika, Italian seasoning, garlic, onion, and pepper to give chicken thighs and legs bold, savory flavor. Coated with olive oil and left to marinate, the chicken bakes until juicy and tender with a beautifully seasoned exterior. Add liquid smoke for an optional smoky finish without using a smoker.

Directions

Prepare the Chicken

Pat the chicken thighs and drumsticks dry with paper towels. Place them in a large mixing bowl.

Make the Paprika Italian Rub

Add the paprika, Zesty Italian seasoning, garlic salt, onion powder, black pepper, and salt to a small bowl. Stir until evenly combined.

Season the Chicken

Drizzle the olive oil over the chicken and toss until every piece is lightly coated. If using liquid smoke, add it to the chicken and toss again.

Sprinkle the Paprika Italian Rub over the chicken a little at a time, turning and rubbing the seasoning onto the pieces after each addition. Continue until all of the seasoning has been used and every piece is evenly coated.

Marinate the Chicken

Cover the bowl and refrigerate the seasoned chicken for at least 1 hour or up to 8 hours for more flavor.

Remove the chicken from the refrigerator about 20 minutes before baking.

Preheat the Oven

Preheat the oven to 375°F. Line a large rimmed baking sheet with parchment paper or lightly grease a large baking dish.

Bake the Chicken

Arrange the chicken in a single layer, leaving a little space between each piece. Place the chicken thighs skin-side up.

Bake for 40–50 minutes, or until the chicken is cooked through. Cooking time may vary depending on the size and type of chicken pieces.

Check the thickest part of the chicken with a meat thermometer without touching the bone. Chicken is safe to eat at 165°F, although thighs and drumsticks are often more tender when cooked to about 175–185°F.

Rest and Serve

Remove the chicken from the oven and let it rest for 5–10 minutes before serving so the juices can settle back into the meat.

RECIPE TIPS

  • For the best flavor, gently loosen the skin and rub a little of the Paprika Italian Rub underneath before marinating. This seasons the meat directly while the outside becomes beautifully browned as it bakes. For crispier skin, broil the chicken for 2–3 minutes at the end, watching closely so the paprika doesn't burn.

Frequently Asked Questions

  • Can I make Paprika Italian Chicken without liquid smoke?

Yes. Liquid smoke is completely optional. The paprika, Italian seasoning, garlic, and onion give the chicken plenty of flavor on their own.

  • Does paprika go with Italian seasoning?

Yes. Paprika and Italian seasoning pair very well together, especially with chicken. Paprika adds mild, smoky flavor and color, while Italian seasoning adds savory herbs such as oregano, basil, and thyme.

  • Can I use only chicken thighs or only drumsticks?

Absolutely. You can use all chicken thighs, all drumsticks, or a combination of both. Just keep in mind that cooking times can vary depending on the size of the pieces.

  • Can I make the Paprika Italian Rub ahead of time?

Yes. Mix the dry seasonings together and store the rub in an airtight container in a cool, dry place until you're ready to use it.

  • What can I serve with Paprika Italian Chicken?

This chicken goes well with Ranch Mashed Potatoes, Garlic Butter Rice, roasted vegetables, Garlic Butter Noodles, Macaroni and Cheese, or a fresh garden salad. It's an easy main dish to pair with your favorite sides.
