Our bbq Stir-Fry with Shrimp and pineapple packs this stir-fry full of flavor without tons of time or effort! Simple and fast, you can serve over noodles or rice. Sweet pineapple and tangy barbecue Chinese-style shrimp make for a grown-up version of a sweet and sour stir-fry. You can use fresh or canned pineapple.

You Will Need

  • Sweet & Spicy BBQ Shrimp Stir Fry

  • □ 1 (16 oz) bag medium shrimp, peeled and deveined

  • □ ½ tsp salt

  • □ ¼ tsp black pepper

  • □ ½ tsp garlic powder

  • □ 1 TBSP oil

  • Vegetables & Pineapple

  • □ 4 cups fresh pineapple chunks or 1 large can pineapple chunks, drained

  • □ 1 (8 oz) bag sugar snap peas

  • □ 2 red bell peppers, cut into bite-size pieces

  • □ 2 TBSP butter

  • Sweet & Spicy BBQ Sauce

  • □ ½ cup BBQ sauce

  • □ 2 TBSP soy sauce

  • □ 2 TBSP pineapple juice

  • □ 1 TBSP honey or brown sugar

  • □ 1 TBSP rice vinegar

  • □ 1 tsp minced garlic

  • □ ½ tsp ground ginger

  • □ ¼–½ tsp red pepper flakes

  • □ 1 tsp cornstarch

Directions

Prepare the Sweet & Spicy BBQ Sauce

  • In a small bowl, whisk together ½ cup BBQ sauce, 2 TBSP soy sauce, 2 TBSP pineapple juice, 1 TBSP honey or brown sugar, 1 TBSP rice vinegar, 1 tsp minced garlic, ½ tsp ground ginger, ¼–½ tsp red pepper flakes, and 1 tsp cornstarch.

  • Whisk until the cornstarch is completely dissolved, then set aside.

Season and Cook the Shrimp

  • Pat the shrimp dry with paper towels.

  • Season with ½ tsp salt, ¼ tsp black pepper, and ½ tsp garlic powder.

  • Heat 1 TBSP oil in a large skillet or wok over medium-high heat.

  • Add the shrimp and cook, stirring occasionally, just until pink and opaque.

  • Remove the shrimp from the skillet and set aside.

Cook the Vegetables

  • Add 2 TBSP butter to the same skillet.

  • Add the red bell peppers and sugar snap peas.

  • Stir-fry for about 3–4 minutes, or until the vegetables are crisp-tender.

Add the Pineapple

  • Add the pineapple chunks to the skillet.

  • Cook for another 2–3 minutes, stirring occasionally, until the pineapple is heated through and beginning to lightly caramelize around the edges.

Finish the Stir Fry

  • Return the cooked shrimp to the skillet.

  • Whisk the prepared BBQ sauce once more, then pour it over the shrimp, pineapple, and vegetables.

  • Toss everything together and cook for 1–2 minutes, until the sauce is bubbling, glossy, and thick enough to coat everything.

  • Remove from the heat as soon as the sauce has thickened to avoid overcooking the shrimp.

  • Taste and add additional salt or red pepper flakes if desired.
