Strawberry Crepes

Soft, easy crepes made with pancake mix, filled with fresh strawberries, and topped with sweet homemade strawberry sauce. Perfect for breakfast, brunch, or dessert.

□ 1 cup complete pancake mix (just-add-water variety)
□ 1⅓ cups water
Strawberry Sauce
□ 2 cups fresh strawberries, sliced
□ ½ cup granulated sugar
□ 1 TBSP cornstarch
□ 2 TBSP water
□ 1 tsp vanilla extract

Ingredients

● Make the Strawberry Sauce
Add the sliced strawberries and sugar to a small saucepan. Cook over medium heat for 3–4 minutes, stirring occasionally, until the strawberries begin to soften and release their juices.

In a small bowl, stir together the cornstarch and 2 TBSP water until completely smooth. Pour it into the strawberries and stir well. Continue cooking for 2–3 minutes, stirring frequently, until the sauce thickens.

Remove from the heat and stir in the vanilla extract. Set aside while you make the crepes.

● Make the Crepe Batter
Add the complete pancake mix and 1⅓ cups water to a mixing bowl. Whisk until smooth and well combined.

● Cook the Crepes
Heat an 8-inch nonstick skillet over medium heat. Lightly grease the skillet with cooking spray or a small amount of butter.

Pour about ¼ cup batter into the center of the skillet. Immediately tilt and swirl the pan to spread the batter into a thin, even circle.

Cook for 1–2 minutes, or until the edges begin to lift and the bottom is lightly golden. Carefully flip and cook the second side for 30–60 seconds.

Transfer to a plate and repeat with the remaining batter.

● Fill the Crepes
Spoon some of the warm strawberry sauce into the center of each crepe. Fold or roll the crepes around the strawberry filling.

● Top & Serve
Spoon additional strawberry sauce over the crepes. Finish with whipped cream and a light dusting of powdered sugar, if desired. Serve warm.

RECIPE TIPS

  • For thin, tender crepes, swirl the batter around the skillet as soon as you pour it in. If the batter seems too thick to spread easily, add 1 tablespoon of water at a time until it flows smoothly around the pan.

● Can I make the strawberry sauce ahead of time?

Yes. Make the strawberry sauce ahead and store it covered in the refrigerator. Gently warm it before serving, or use it chilled if you prefer.

 

● Why is my crepe batter too thick to swirl?

Different pancake mixes can absorb water differently. If the batter doesn't spread easily, stir in 1 tablespoon of water at a time until it's thin enough to swirl around the skillet.

 

● Can I use frozen strawberries?

Yes. Frozen strawberries will work, but they may release more liquid as they cook. Let the sauce simmer until it reaches a thick, spoonable consistency.

 

● How do I keep the crepes from sticking to the pan?

Use a good nonstick skillet and lightly grease it before cooking. Let the first side cook until the edges begin to lift before trying to flip the crepe.

 

● Can I make the crepes ahead of time?

Yes. Cook the crepes ahead and stack them with parchment or wax paper between them to prevent sticking. Refrigerate them covered, then fill with the strawberry sauce when you're ready to serve.
