Thank you so much for supporting my site Colcannon is so loved, that it has inspired a traditional Irish song by its own name or by the name, “The Skillet Pot,” and has been recorded by many artists. Lyrics: “Did you ever eat Colcannon, made from lovely pickled cream? With the greens and scallions mingled like a picture in a dream. Did you ever make a hole on top to hold the melting flake Of the creamy, flavored butter that your mother used to make?” The chorus: “Yes you did, so you did, so did he and so did I. And the more I think about it sure the nearer I’m to cry. Oh, wasn’t it the happy days when troubles we had not, And our mothers made Colcannon in the little skillet pot.” Join Us for the latest updates: Facebook Pinterest YouTube Instagram LinkedIn Twitter

If you'd like to save some for later, roll it into a log with leaves tucked in a little, keeping the stems intact. Cut the desired amount of cilantro leaves and set them aside for this recipe. If your stew meat is frozen, you'll need to thaw it first. Place the frozen meat in your Instant Pot and pressure cook it for 4 minutes on high pressure with one cup of water. After the pressure cooking, release the pressure manually. Once the meat is thawed, add the fire roasted chili's (you can chop them or leave them whole), salt, pepper, garlic powder, lemon pepper, crushed red pepper, and 2 cups of water to the Instant Pot with the meat. Seal the Instant Pot, ensuring it's set to "sealing" and not "venting." Pressure cook on high for 30 minutes with an instant release. Wait until the valve pin drops, indicating the pressure is released, before opening the lid. Be sure to open the lid away from you to avoid the hot steam. Stir the contents in the Instant Pot and chop up the green chilies to distribute their flavors throughout the stew meat. To assemble the burritos, warm up tortillas and place a generous portion of the stew meat and green chili mixture in the center. Top the stew meat with green pepper slices, sour cream, shredded cheese, and diced onion. Squeeze the juice from a lemon wedge over the fillings. Fold the sides of the tortilla over the fillings and roll it up to create a burrito. Thank you so much for supporting my site How to make Green Chili Beef burritos Stove Top In a large skillet or a Dutch oven, heat some oil over medium-high heat. Add the stew meat pieces and brown them on all sides. This should take about 5-7 minutes. Remove the meat from the skillet and set it aside. In the same skillet, add the chopped fire roasted chilies and sauté for a couple of minutes until they become fragrant. Return the browned stew meat to the skillet and add the salt, pepper, garlic powder, lemon pepper, crushed red pepper, and 2 cups of water. Stir to combine all the ingredients. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20-25 minutes, or until the meat is tender and the flavors are well incorporated. You may need to add more water if it becomes too dry during cooking. While the stew meat is simmering, warm the flour tortillas in a separate skillet or microwave. Once the meat is cooked and tender, remove it from the heat. You can use a slotted spoon to transfer the meat to the tortillas to prevent excess liquid from making them soggy. Top the stew meat in the tortillas with green pepper slices, sour cream, shredded cheese, diced onion, and a squeeze of lemon juice from a wedge. Fold the sides of the tortilla over the fillings and roll it up to create a burrito. Thank you so much for supporting my site How to make Green Chili Beef burritos for OAMC (Freezer Meals) In a large stockpot or multiple pots if needed, brown the stew meat pieces in batches over medium-high heat. Simmer the mixture over low heat for 20-25 minutes or until the meat is tender and the flavors are well incorporated. Adjust the water and seasonings as needed based on the amount of meat you're cooking. While the stew meat is simmering, you can prepare and assemble the tortillas with green pepper slices, sour cream, shredded cheese, diced onion, and lemon wedges. Once the meat is cooked and tender, remove it from the heat and allow it to cool. Portion the stew meat and the chili mixture into individual meal-sized portions. This easy and classic recipe is ideal for family dinners, fish fries, or a comforting weeknight dinner. Pair these fried fish fillets with tartar sauce, coleslaw, and potato wedges for a complete and satisfying meal. Southern Fried Fish Fillets Ingredients Fish 4 fish fillets (6–8 ounces each), such as tilapia, cod, or pollock Buttermilk Soak 1½ cups buttermilk OR 1½ cups milk mixed with 1½ tablespoons lemon juice or white vinegar 1 tablespoon hot sauce (optional) Crispy Fish Coating 1½ cups yellow cornmeal ½ cup all-purpose flour 1 teaspoon baking powder 1½ teaspoons salt 1 teaspoon black pepper 1 teaspoon smoked paprika ½ teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon cayenne pepper (adjust to taste) 1 teaspoon Old Bay seasoning (optional) For Frying Vegetable oil, peanut oil, or canola oil (about 2–3 cups, depending on the size of your skillet) Make Your Own Seasonings Allspice Cumin Cinnamon Sugar Ranch Dressing Packet Zesty Italian Seasoning Make Ahead Frozen Garlic, Onion Drops How To Make Southern Fried Fish Filets Instructions Step 1: Marinate the Fish In a large bowl, whisk together the buttermilk and hot sauce (if using). Add the fish fillets, making sure they're fully coated. Cover and refrigerate for 30 minutes to 2 hours. This helps tenderize the fish while adding extra flavor and moisture. Step 2: Prepare the Coating In a shallow dish, combine the cornmeal, flour, baking powder, salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and Old Bay seasoning (if using). Stir until well combined. Step 3: Heat the Oil Pour about 2 inches of oil into a large, deep skillet or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F. No thermometer? Drop a small pinch of the cornmeal mixture into the oil. If it sizzles immediately, the oil is ready. Step 4: Coat the Fish Remove one fillet from the buttermilk, allowing any excess to drip off. Coat the fish evenly in the cornmeal mixture, gently pressing the coating onto both sides. Shake off any excess and place the coated fillet on a tray or plate. Repeat with the remaining fillets. Step 5: Fry the Fish Carefully place 1–2 fillets into the hot oil, being careful not to overcrowd the pan. Fry for 3–5 minutes per side, or until the fish is golden brown, crispy, and flakes easily with a fork. The internal temperature should reach 145°F. Transfer the cooked fish to a wire rack or a paper towel-lined plate to drain while you fry the remaining fillets. Step 6: Serve Serve immediately with your favorite sides such as: Homemade tartar sauce Coleslaw Oven-baked potato wedges Hush puppies French fries Fresh lemon wedges Enjoy while hot and crispy! Connie's Tip ❤️ For the crispiest fried fish, place the cooked fillets on a wire rack instead of paper towels. This allows air to circulate around the fish and helps keep the coating nice and crispy. Tips: Perfect Southern Fried Fish Fillets Connie's Tips ❤️ 🐟 Choose the Right Fish Firm, white fish like tilapia, cod, pollock, or catfish work best. They fry up flaky on the inside with a perfectly crispy coating. 🥣 Let the Coating Rest After coating the fish, let it rest for 5–10 minutes before frying. This helps the breading stick better and creates a crispier crust. ✨ Add Extra Crunch A little baking powder in the coating helps create an extra light, crispy texture. 🌡️ Keep the Oil Hot For the crispiest fish, keep the oil around 350°F. If the oil is too hot, the coating can burn. If it's too cool, the fish may absorb excess oil and become greasy. 🍳 Fry in Small Batches Avoid overcrowding the pan. Frying just 1–2 fillets at a time helps maintain the oil temperature and gives each piece a perfectly golden crust. ✔️ Know When It's Done The fish is ready when it's golden brown, flakes easily with a fork, and reaches an internal temperature of 145°F. 🥄 Keep It Crispy Place the cooked fish on a wire rack instead of paper towels. This allows air to circulate and keeps the coating nice and crispy. 🍋 Serve with Your Favorites Fried fish is delicious served with: Homemade tartar sauce Coleslaw Hush puppies Oven-baked potato wedges French fries Fresh lemon wedges 🔥 Reheating Leftovers For the best results, reheat leftover fish in a 375°F oven or air fryer for 8–10 minutes until hot and crispy. Avoid the microwave, as it can soften the coating. ❤️ Connie's Bonus Tip Don't skip the buttermilk soak! It helps tenderize the fish, adds flavor, and gives the crispy coating something to cling to, creating that classic Southern-style crunch. You Will Need 2 (1 pound each) Ribeye Steaks 2 tsp Salt 2 tsp Pepper 2 full Sprigs of Rosemary 2 TBSP Oil 2 TBSP Minced Garlic 3 TBSP Butter Thank you so much for supporting my site What goes well with Rosemary Garlic/butter Ribeye's Parmesan Potato Bites Instant Pot Corn On The Cob Basic Mashed Potatoes Brussel Spouts Southern Kicked-up Green Beans How to make Rosemary Garlic Butter Ribeye's Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius). Start by seasoning your Ribeye Steaks: Sprinkle 1 teaspoon of salt and 1 teaspoon of pepper evenly on each side of both steaks. Pat the seasoning into the meat for better adhesion. Prepare the Rosemary-Infused Butter: Strip the rosemary leaves from the sprigs and chop them finely. In a small saucepan, melt 3 tablespoons of butter over low heat. Once melted, add the minced garlic and chopped rosemary to the butter. Stir gently and let it infuse over low heat for about 2 minutes. Remove from heat and set aside. Sear the Steaks: Heat a cast-iron pan over medium-high heat. Add 2 tablespoons of oil and heat until it shimmers and starts to sizzle. Carefully place the seasoned ribeye steaks in the hot pan. Sear each side for about 1 minute to develop a beautiful crust. Create the Flavorful Finish: Reduce the heat to medium-low. Pour the prepared rosemary-infused garlic butter over the steaks. Add the full rosemary sprigs to the pan for added flavor. Baste the Steaks: Using a spoon, continuously baste the steaks with the melted butter and garlic mixture for about 3 minutes. This helps infuse the meat with the rich flavors. Transfer to the Oven: Turn off the stovetop heat and carefully move the cast-iron pan with the steaks to your preheated oven. Finish Cooking in the Oven: Let the steaks cook in the oven for an additional 3 minutes for a medium-rare doneness. If you prefer your steak cooked differently, adjust the time accordingly: Rare: 2 minutes in the oven Medium: 4 minutes in the oven Medium-Well: 5-6 minutes in the oven Keep in mind that these times are approximate, and actual cooking times may vary based on the thickness of the steaks and your oven's performance. Rest and Slice: Carefully remove the cast-iron pan from the oven, and using oven mitts, place it on the stovetop. Let the steaks rest in the pan for about 10 minutes. Resting allows the juices to redistribute, resulting in tender and flavorful meat. After resting, transfer the steaks to a cutting board. Slice the steaks against the grain into your desired thickness. Serve and enjoy your perfectly cooked Rosemary-Infused Ribeye Steaks! Thank you so much for supporting my site Pro Tips for Perfect Rosemary-Infused Ribeye Steaks Choose Quality Steaks: Start with high-quality, well-marbled ribeye steaks. Look for steaks that are at least 1 inch thick, as they will cook more evenly. Bring the Steaks to Room Temperature: Take the steaks out of the refrigerator at least 30 minutes before cooking. Allowing them to come to room temperature ensures more even cooking. Season Generously: Make sure to season both sides of the steaks with salt and pepper, and press the seasoning into the meat. Seasoning enhances the flavor of the meat. Use a Cast-Iron Pan: Cast-iron pans distribute heat evenly and hold temperature well, making them ideal for searing and cooking steaks. Preheat the Pan: Preheat your cast-iron pan over medium-high heat before adding the oil. The pan should be hot enough to create a sizzle when the steaks are placed in it. This helps form a nice crust. Don't Overcrowd the Pan: Ensure there is enough space in the pan for each steak. Overcrowding can reduce the pan's temperature and hinder the searing process. Be Cautious with Oven Timing: The provided oven cooking times are approximate. Use an oven-safe meat thermometer to check the internal temperature of the steaks for precision. For medium-rare, aim for around 130-135°F (54-57°C). Baste for Flavor: Basting the steaks with the rosemary-infused garlic butter not only adds flavor but also helps to keep the steaks moist. Rest the Steaks: Allowing the steaks to rest after cooking is essential. It helps the juices redistribute throughout the meat, resulting in juicier and more tender steaks. Slice Against the Grain: When you're ready to slice the steaks, make sure to cut against the grain. This makes the meat more tender and easier to chew. Serve with Accompaniments: Consider serving your steaks with complementary sides like roasted vegetables, mashed potatoes, or a fresh salad. Experiment with Doneness: Adjust the oven cooking time to achieve your desired level of doneness. Use a meat thermometer to check the internal temperature, as it's the most accurate way to determine doneness. With these tips, you should be well-equipped to create a delicious and perfectly cooked Rosemary-Infused Ribeye Steak. Enjoy your meal! Thank you so much for supporting my site Variations for Perfect Rosemary-Infused Ribeye Steaks Mushroom and Red Wine Reduction: After searing the steaks, set them aside and add sliced mushrooms to the pan. Sauté until they're browned. Then, deglaze the pan with red wine and let it simmer until it reduces to a rich sauce. Serve the steaks with this mushroom and red wine reduction. Blue Cheese Topping: Make a blue cheese topping by mixing crumbled blue cheese with softened butter. Spoon this mixture on top of the cooked steaks while they're resting, allowing it to melt and create a creamy, tangy topping. Chimichurri Sauce: Instead of rosemary-infused butter, serve the steaks with a vibrant chimichurri sauce made from fresh herbs, garlic, red wine vinegar, and olive oil. Drizzle it over the sliced steaks for a burst of flavor. Peppercorn-Crusted Ribeye's : Crush whole peppercorns and press them onto the steaks along with salt before searing. The cracked pepper adds a spicy kick and a delightful texture to the steaks. Citrus-Marinated Ribeyes: Marinate the steaks in a mixture of citrus juices (lemon and orange), olive oil, garlic, and herbs for a couple of hours before cooking. The citrus adds a zesty and refreshing twist to the flavor. Asian-Inspired Soy and Ginger Glaze: Instead of rosemary, infuse the butter with fresh grated ginger and garlic. Then, add a soy sauce and honey glaze for a savory, sweet, and umami flavor profile. Cajun Seasoning: Season the steaks with a homemade or store-bought Cajun spice blend before searing. This will give your ribeye's a spicy, flavorful kick. Balsamic Reduction: Instead of rosemary-infused butter, prepare a balsamic reduction by simmering balsamic vinegar with a touch of sugar until it thickens. Drizzle this reduction over the cooked steaks for a sweet and tangy finish. Herb-Butter Mix: Experiment with different herbs in the butter mixture. Try thyme, oregano, or basil along with garlic to infuse the butter and create unique flavors. Balsamic and Rosemary Glaze: After searing the steaks, set them aside and make a balsamic and rosemary glaze. In a separate pan, combine balsamic vinegar, fresh rosemary sprigs, and a touch of honey or brown sugar. Simmer until the mixture thickens and becomes a sweet and tangy glaze. Drizzle this glaze over the sliced steaks for an elegant and flavorful finish.

To increase the heat, you can add additional chopped Anaheim peppers or a dash of hot sauce according to your spice preference. It's a fantastic condiment that adds a delightful kick to your meals. How to make Copycat Taco Bell Red Sauce Roasting and Preparing the Red Anaheim Peppers: Preheat your oven to the broil setting. Wash the red Anaheim peppers thoroughly and pat them dry with a paper towel. Leave the stems intact; you'll remove them later. Place the whole red Anaheim peppers on a baking sheet lined with aluminum foil. Put the baking sheet with the peppers on the top oven rack, closest to the broiler element. Use the high broil setting. Keep a close eye on the peppers. The goal is to char the skin on all sides. This will take about 5-10 minutes, but it can vary depending on your oven and the distance from the broiler. As the skin of the peppers starts to blister and char, use tongs to carefully turn them so that all sides get evenly roasted. Once the peppers are evenly charred and the skin has blistered and blackened, remove the baking sheet from the oven. The peppers should be tender on the inside. Allow the roasted peppers to cool for a few minutes until they are safe to handle. Then, using your fingers or a paper towel, gently rub off the charred skin. Also, remove the stems and seeds from the peppers. Making the Red Sauce: Chop the roasted, peeled, and deseeded red Anaheim peppers finely. In a small saucepan, combine the chopped roasted red Anaheim peppers, one can (15 ounces) of tomato sauce, one can (8 ounces) of tomato sauce (filled with 1 inch of water), and 3/4 cup of water. Add the chili powder, paprika, cumin, garlic powder, onion salt, black pepper, salt, sugar, and white vinegar to the saucepan. Bring the mixture to a simmer over medium-low heat. Allow it to simmer for about 10-15 minutes to meld the flavors. Remove the saucepan from heat. Transfer the mixture to a blender and blend until smooth and liquified. Taste the sauce and adjust the seasoning if necessary. You can add more salt, sugar, or vinegar to match your taste preference. Remove the sauce from the blender and let it cool before transferring it to an airtight container. Thank you so much for supporting my site Storage Tips for Red Sauce: Refrigeration: If you have leftover homemade red sauce, allow it to cool to room tempe rature before transferring it to an airtight container. Store it in the refrigerator for up to 4-5 days. Freezing: To extend the shelf life, you can freeze the red sauce. Pour it into an airtight container or freezer bags, leaving some room for expansion. Seal well and label with the date. Frozen red sauce can last for about 3-4 months. Portioning: Consider freezing the sauce in smaller portions, so you can defrost only what you need for future meals, reducing waste. Thawing: When you're ready to use frozen red sauce, transfer it to the refrigerator overnight to thaw gradually. You can also thaw it more quickly in a microwave or on the stove over low heat.
